Korean-style fried chicken gizzard: A Delicious Beer Snack

Have you ever seen Chicken Gizzards amongst the chickens in the meat section of an American grocery store? When I first saw it in a grocery store in the United States, I was a little confused. I thought it was only eaten in Asia, so I thought there must be a lot of Asians around, but when I looked for it, I found that it is cooked and eaten in quite a few countries. They’re a popular street food in Haiti and throughout Southeast Asia where they’re grilled. They’re also commonly found fried in Indonesia and Japan, stewed in Portugal, broiled in Africa, and served fried, boiled or grilled. In Europe they’re featured in salads and pâtés.

 

Chicken Gizzards, sautéed with garlic, are a popular drinking snack in Korea. When I lived in Jeju Island, South Korea, I remember enjoying sautéed chicken gizzards with samgyetang at my favorite restaurant. Recently, I spotted chicken gizzards at my local Minnesota grocery store, Cub Foods, and picked up a pack. Today we're going to make Korean-style "Fried Chicken Gizzards".

Health Benefits of Chicken Gizzards


Chicken gizzards are the muscular tissues that toothless birds use to crush their food. Since it is mostly muscle, it is a low-fat, high-protein food, and the lining of the gizzard is also used as a herbal medicine for indigestion, diarrhea, stomach upset, and more. Chicken gizzards are rich in protein and contain important vitamins such as B12 which aids in brain health. They are also high in zinc, iron and phosphorous which are essential minerals for our bodies. A serving of gizzards provides 20 percent of the DV for vitamin B12 with 1.2 micrograms.

 

Making fried Chicken gizzards

 

1. Remove the smell of chicken gizzards. 

Even though it's an organ made up of muscles, the chicken's gizzard is basically a gut, so it has a distinctive odor. Whether you're stir-frying or frying them, it's a good idea to remove the odor. 

 

Alternatively, you can follow the steps below to remove odors more thoroughly. 

① Soak the coop in cold water for 1-2 hours to remove blood.
② Soak in milk for an additional 30 minutes
③ Wash with coarse salt and pepper
④ Rub well with flour
⑤ Rinse off the flour with cold water 

 

Place the well-washed chicken gizzards on kitchen paper to drain. 

 

2. Season the chicken gizzards with salt and pepper.



3. Prepare a thick fry batter by mixing "Korean Frying Mix" or "Pancake Mix" or "Korean Taste Crispy Fried Chicken Mix", eggs, and enough water to thicken.

You can find Korean flour mixes at Korean grocery stores, Asian grocery stores, Amazon, and elsewhere.

4. Prepare the garlic by cleaning and drying it well with a kitchen towel. 

 

5. Coat the cleaned chicken gizzards in batter and preheat the oil. 


6. Fry for 5 minutes, flipping once, until golden brown. With about 3 minutes left, add the garlic and fry.

7. Drain the oil once and place on a plate.

There are also fried chicken gizzards, which are fried directly in oil without batter. They are fried with garlic and chili peppers and are spicy and delicious. When frying directly in oil, the chicken gizzards, garlic, and peppers must be thoroughly drained.

Korean Taste Crispy Fried Chicken Mix gives fried chicken gizzards a crispier, more savory flavor.

This is how I made Korean fried chicken gizzards, a specialty in the United States. In Korea, you can go to a nearby restaurant or have it delivered to your home, but here, you have to buy the ingredients and make it yourself, which is inconvenient and annoying. However, if you make it at home, it's not that difficult. These Korean-style fried chicken gizzards are delicious and can be devoured in a flash. Beer should always be by my side. Cheers!
